Source 1: Shabbat observance imparts knowledge of God as Agent Sanctifying Israel

And יהוה said to Moses: Speak to the Israelite people and say: Nevertheless, you must keep My sabbaths, for this is a sign between Me and you throughout the ages, that you may know that I יהוה have consecrated you. You shall keep the sabbath, for it is holy for you. One who profanes it shall be put to death: whoever does work on it, that person shall be cut off from among kin. Six days may work be done, but on the seventh day there shall be a sabbath of complete rest, holy to יהוה; whoever does work on the sabbath day shall be put to death. The Israelite people shall keep the sabbath, observing the sabbath throughout the ages as a covenant for all time: it shall be a sign for all time between Me and the people of Israel. For in six days יהוה made heaven and earth, and on the seventh day [God] ceased from work and was refreshed.

Source 2: Sukkot-- knowledge of what God did for ancestors, not ongoing sign of God relating to us

(מב) בַּסֻּכֹּ֥ת תֵּשְׁב֖וּ שִׁבְעַ֣ת יָמִ֑ים כׇּל־הָֽאֶזְרָח֙ בְּיִשְׂרָאֵ֔ל יֵשְׁב֖וּ בַּסֻּכֹּֽת׃ (מג) לְמַ֘עַן֮ יֵדְע֣וּ דֹרֹֽתֵיכֶם֒ כִּ֣י בַסֻּכּ֗וֹת הוֹשַׁ֙בְתִּי֙ אֶת־בְּנֵ֣י יִשְׂרָאֵ֔ל בְּהוֹצִיאִ֥י אוֹתָ֖ם מֵאֶ֣רֶץ מִצְרָ֑יִם אֲנִ֖י יְהֹוָ֥ה אֱלֹהֵיכֶֽם׃

(42) You shall live in booths seven days; all citizens in Israel shall live in booths, (43) in order that future generations may know that I made the Israelite people live in booths when I brought them out of the land of Egypt—I, your God יהוה.

(38) Now this is what you shall offer upon the altar: two yearling lambs each day, regularly. (39) You shall offer the one lamb in the morning, and you shall offer the other lamb at twilight. (40) There shall be a tenth of a measure of choice flour with a quarter of a hin of beaten oil mixed in, and a libation of a quarter hin of wine for one lamb; (41) and you shall offer the other lamb at twilight, repeating with it the meal offering of the morning with its libation—an offering by fire for a pleasing odor to יהוה, (42) a regular burnt offering throughout the generations, at the entrance of the Tent of Meeting before יהוה. For there I will meet with you, and there I will speak with you, (43) and there I will meet with the Israelites, and it shall be sanctified by My Presence. (44) I will sanctify the Tent of Meeting and the altar, and I will consecrate Aaron and his sons to serve Me as priests. (45) I will abide among the Israelites, and I will be their God. (46) And they shall know that I יהוה am their God, who brought them out from the land of Egypt that I might abide among them—I, their God יהוה.

I brought them out of the land of Egypt and I led them into the wilderness. I gave them My laws and taught them My rules, by the pursuit of which a man shall live. Moreover, I gave them My sabbaths to serve as a sign between Me and them, that they might know that it is I the LORD who sanctify them. But the House of Israel rebelled against Me in the wilderness; they did not follow My laws and they rejected My rules—by the pursuit of which a man shall live—and they grossly desecrated My sabbaths. Then I thought to pour out My fury upon them in the wilderness and to make an end of them; but I acted for the sake of My name, that it might not be profaned in the sight of the nations before whose eyes I had led them out. However, I swore to them in the wilderness that I would not bring them into the land flowing with milk and honey, the fairest of all lands, which I had assigned [to them], for they had rejected My rules, disobeyed My laws, and desecrated My sabbaths; their hearts followed after their fetishes. But I had pity on them and did not destroy them; I did not make an end of them in the wilderness. I warned their children in the wilderness: Do not follow the practices of your fathers, do not keep their ways, and do not defile yourselves with their fetishes. I the LORD am your God: Follow My laws and be careful to observe My rules. And hallow My sabbaths, that they may be a sign between Me and you, that you may know that I the LORD am your God.

Source 5: R' Naphtali Zvi Yehuda Berlin-- Knowledge of God obtained through experience of Shabbat holiness is special because immaterial

אך את שבתותי תשמרו. .. ופי׳ לדעת כי אני וגו׳. דכל דבר הגורם לישראל התעוררות קדושה כמו בה״מ וכדומה בא ע״י התפעלות מדבר שבקדושה ונמצא שגם זה הדבר מסייע לכך. ואפילו גוי שרואה בהכ״נ או ס״ת ישיג איזה התפעלות הנפש מידיעתו שזה דבר שבקדושה אבל מה שאדם מישראל ישיג קדושת הנפש בשבת ויו״ט בלי שום הרגש חיצוני מה יום מיומים הוא אות שהקב״ה בעצמו כ״י מסייע לקדש למי שבא להתקדש ומש״ה קדושה זו יקרה בעיני ה׳ לדחות כל עשיית דברים שבקדושה:

And the explanation of "To know that I God am sanctifying you, etc" (is that) anything-- such as the Temple and related-- that causes an awakening of holiness in a member of Israel comes from a feeling of excitement from the holy matter, such that this matter is then revealed to be the facilitator of this feeling. And even a non-Jew who sees a synagogue or a Torah scroll tends to achieve a certain excitement in his soul from the knowledge that this is a holy matter. Though the holiness of soul that a member of Israel achieves on Shabbat and festivals without any external feeling from these days is a sign that God Himself is facilitating that sanctification anyone who comes to be sanctified. And as a result, this sanctity is so dear that it obviates cultic activity. (EWZS translation)
